Ingredients for 6 servings:
- 500 g beef
- 4 onions
- 2 garlic cloves
- 50 g lard
- 1 tbsp flour
- ¼ liter red wine
- ½ liter meat broth
- 1 tsp sweet paprika powder
- ½ tsp paprika powder, hot
- some salt and pepper
- ½ tsp marjoram
- ½ tsp caraway powder
- 2 bell peppers, green
- 200 g potatoes
- 1 carrot(s)
- 5 tomatoes
Instructions
Working time approx. 30 minutes; Cooking/baking time approx. 1 hour 25 minutes; Total time approx. 1 hour 55 minutes
Cut the meat into small pieces and dice the onion. Crush the garlic. Heat the lard in a pan and brown the meat for 10 minutes. Add the onion and garlic and continue to cook. Sprinkle with flour and let everything sweat through. Deglaze with red wine and broth, then add the paprika and spices. Cover and simmer for 40-50 minutes. Peel the bell peppers, potatoes, and root vegetables and cut into small cubes. Blanch and peel the tomatoes, then deseed and chop them. Add everything to the soup and simmer for another 20 minutes. Season to taste and serve with sour cream, if desired. Serve with warm baguette; it tastes delicious.
