  • 350 g Elderberries fresh
  • 2 El Water
  • 3 El Sugar
  • 150 g Double cream
  • 200 g Whipped cream
  • 3 Egg yolk
  • 1 Egg
  • 50 ml Elderflower syrup
  1. Bring the elderberries to the boil with the water and 2 tablespoons of sugar. Then press through a sieve.
  2. Beat the yolks and the egg in a bowl with the remaining sugar, then add the juice and beat over steam. Then beat it cold.
  3. Whip the cream and double cream separately and add to the cooled mass, then season with elderberry syrup and place in the ice cream maker.
