- 350 g Elderberries fresh
- 2 El Water
- 3 El Sugar
- 150 g Double cream
- 200 g Whipped cream
- 3 Egg yolk
- 1 Egg
- 50 ml Elderflower syrup
- Bring the elderberries to the boil with the water and 2 tablespoons of sugar. Then press through a sieve.
- Beat the yolks and the egg in a bowl with the remaining sugar, then add the juice and beat over steam. Then beat it cold.
- Whip the cream and double cream separately and add to the cooled mass, then season with elderberry syrup and place in the ice cream maker.
