Ice Cream: Elderberry Ice Cream

The perfect ice cream: elderberry ice cream recipe with a picture and simple step-by-step instructions.

  • 250 g Elderberry fresh
  • 120 g Sugar
  • 1 Egg yolk
  • 2 Eggs
  • 200 ml Cream
  • 3 El Elderflower syrup
  • 1 shot Red wine
  1. Wash the elderberries with 100 g sugar and 50 ml water and bring to the boil. Then press Lotte through a sieve of the liquor.
  2. Beat the yolks with the whole egg, the remaining sugar, the wine, the syrup and the pressed juice to a rose over steam, then beat over ice water until cold.
  3. Whip the cream until stiff and fold into the cooled mass, then put in the ice cream maker for an hour.
