Ice Cream: Elderberry Ice Cream

- 250 g Elderberry fresh
- 120 g Sugar
- 1 Egg yolk
- 2 Eggs
- 200 ml Cream
- 3 El Elderflower syrup
- 1 shot Red wine
- Wash the elderberries with 100 g sugar and 50 ml water and bring to the boil. Then press Lotte through a sieve of the liquor.
- Beat the yolks with the whole egg, the remaining sugar, the wine, the syrup and the pressed juice to a rose over steam, then beat over ice water until cold.
- Whip the cream until stiff and fold into the cooled mass, then put in the ice cream maker for an hour.
