Iceberg lettuce with mandarins

Ingredients for 2 servings:

  • 1 head of iceberg lettuce
  • 150 g natural yogurt
  • ½ lime(s)
  • 1 can mandarin orange(s), or fresh
  • 1 pinch(s) of sugar
  • e.g. salt and pepper
  • little juice, (mandarin orange)

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

with fresh yogurt-lime dressing.

Wash and chop the iceberg lettuce. Drain the mandarins and add them to the iceberg lettuce. Peel and fillet fresh mandarins – it’s a bit of work, but it tastes better. In a small bowl, mix the yogurt with the juice of half a lime and a pinch of sugar. Season with pepper and/or salt if desired. I usually add a little mandarin juice, but only a little. Since I only make the salad with fresh mandarins, I use the leftovers from the filleting process and squeeze out the juice. Now pour the dressing over the salad and enjoy. If you want herbs, you can also add an 8-herb blend; it also tastes delicious.
