Ingredients for 2 servings:

  • 400 g chicken breast
  • 1 can coconut milk
  • 30 g butter
  • 40 g flour
  • 1 can peach(s) or pineapple, drained, in pieces
  • 1 bell pepper(s), yellow
  • 1 onion(s)
  • 2 tsp, leveled curry powder
  • 1 tsp, leveled paprika powder
  • salt and pepper

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

First, wash the meat and cut it into small pieces. Then, chop the bell pepper and onion and fry all three ingredients. Next, prepare a roux by sautéing the butter in a saucepan and adding the flour. Stir in the coconut milk. Season the roux with the spices listed and add peach or pineapple pieces, if desired. Later, add the meat to the sauce and let it simmer for another 10-15 minutes. This can be served with rice or potatoes.
