Indian Red Lentil Soup

Ingredients for 4 servings:

  • 250 g lentils, red
  • 250 g onion(s)
  • 30 g ginger root
  • 1 small chili pepper(s)
  • Salt
  • pepper
  • 1 tsp spice mix (garam masala)
  • 1 tsp turmeric
  • 1 liter vegetable broth
  • 500 g tomatoes
  • ½ bunch parsley

Wash the lentils and drain. Peel the onions and ginger, finely chop both, and sauté in hot oil for about 2 minutes. Add the diced chili pepper if desired, but be careful, as the ginger does add a certain amount of heat. Briefly roast the spices, then add the lentils and pour in the broth. Cover and simmer for about 10 minutes. Meanwhile, cut the tomatoes crosswise, pour boiling water over them, peel, quarter, deseed, and dice them. Add to the soup, bring to a boil, and season again. Sprinkle with the chopped parsley.
