Vegan chocolate cookies

Ingredients for 1 servings:

  • 180 ml rapeseed oil
  • 225 g sugar
  • 2 tsp vanilla sugar
  • 125 ml soy milk (soy drink)
  • 420 g flour
  • 1 tsp baking powder
  • ½ tsp salt
  • 3 tbsp cocoa powder
  • 25 g flaxseed, crushed
  • Hazelnuts, chopped
  • Chocolate (chocolate drops)

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

for 15 pieces

Preheat oven to 180°C. Mix soy milk and flaxseed. Mix flour, baking powder, salt, and cocoa powder. Mix oil and sugar, then add soy milk and flaxseed mixture and vanilla sugar. Gradually add the flour mixture. If it becomes too dry, continue kneading with your hands. Add hazelnuts and chocolate chips and knead the dough with your hands. Shape the dough into a log and cut into approximately 2.5 cm thick slices with a knife. Shape the cookies into nice round shapes and place them on a baking sheet. Bake at 180°C for approximately 10 minutes, let cool on the baking sheet for 5 minutes, and then cool completely on a wire rack.
