Indian spiced rice

Ingredients for 4 servings:

  • 200 g basmati rice
  • 1 small onion(s), cut into thin half rings
  • 1 tbsp clarified butter
  • 1 small garlic clove(s), squeezed
  • 1 tsp ginger, finely chopped or grated
  • ½ tsp salt
  • 1 pinch of cumin powder
  • 1 tsp. clove powder or 2 cloves, finely ground
  • ½ tsp cardamom powder or cardamom seeds, finely ground
  • ½ tsp cinnamon powder
  • 1 pinch of ground pepper
  • 375 ml water

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Sauté the onion rings in clarified butter over medium heat for about 5 minutes. Add the ginger, garlic, salt, all other spices, and the rice and cook vigorously over high heat for about 1 minute, stirring frequently. Deglaze with water, cover, and cook on low heat until the water is absorbed and the rice is tender (about 15-20 minutes).
