Indian lemon rice

Ingredients for 4 servings:

  • 250 g rice, long grain rice
  • 2 liters of water
  • ½ tsp salt
  • 4 tbsp oil
  • 1 tsp mustard seeds, black
  • 1 tsp turmeric
  • 4 tbsp nuts, chopped cashews
  • 2 tbsp peanuts, chopped
  • 1 lemon(s), the juice
  • 2 tbsp coriander greens, chopped

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Cook the rice in a pot until tender – about 15 minutes. Transfer to a sieve, rinse with cold water, and drain well. Heat the oil in a pan and briefly toast the mustard seeds, turmeric, and chopped nuts. Add the rice and stir-fry. Remove the pan from the heat and toss the rice with the lemon juice. Using two forks, pile the rice into a pyramid shape on a platter and sprinkle with the coriander leaves.
