Indian: Spicy Kaddu Curry – Spicy Pumpkin Curry

- 2 tbsp Oil
- 0,5 tsp Each fennel and cumin seeds
- 2 thumb Ginger
- 2 medium sized Onions
- 3 -4 Zehen Garlic
- 1 -2 Green chilli (Assam chilli)
- 2 medium sized Tomatoes
- 3 -4 Stück Dates (dried)
- 1 tsp Each turmeric and garam masala
- 0,5 tsp Mango powder (alternatively 1-2 tbsp lemon juice)
- 0,5 tsp Chili powder
- 1 tsp Salt
- 450 g Pumpkin meat (e.g. bottle gourd)
- First, we prepare the pumpkin flesh: wash the pumpkin, peel and cut into cubes of 1-2 cm. Now put this aside.
- Continue with ginger, onion, garlic and chilli: Peel the ginger and cut into small cubes or short strips. .. Peel the onions, quarter them lengthways and cut into 2-3 mm strips. .. Peel and halve the garlic, remove the seedling and finely chop. .. Wash and finely chop the chilli. (You can wear gloves to prevent the sharpness from penetrating the skin.) Set everything aside separately.
- Wash the tomatoes, remove the stalk, roughly chop and place in a taller container. Cut the dates twice and puree with the tomatoes.
- Heat the oil in a pan on medium heat and lightly toast the fennel and cumin seeds in it until they start to turn brown.
- Add ginger and sauté until translucent, then add the onions and fry, stirring occasionally, until they start to turn brown.
- Now mix in the garlic and let it simmer until it no longer smells raw.
- Mix in the chili briefly and add the pureed tomato and date mixture. Now bring the whole thing to the boil and reduce the heat. Let simmer until the oil settles slightly or the mixture starts to shine. Stir briefly every now and then.
- Now mix in the spices and salt and let it steep for a moment.
- Fold in the pumpkin cubes and let cook with the lid closed. Stir every now and then so that it doesn’t burn. If the whole thing gets too dry, you can add some water.
- Season to taste and sprinkle with coriander.
- Serve with rice, naan and rooti
- This recipe is enough for 2-3 people as a main course. Depending on the side dishes, it is enough for up to 6 people.
