Ingredients for 4 servings:

  • 600 g pork shoulder
  • 2 tbsp oil
  • 5 onions
  • 10 garlic cloves
  • 8 small potatoes
  • 1 piece(s) of ginger root, approx. 1 cm
  • salt and pepper
  • 3 tomatoes
  • 2 tsp sugar
  • 1 tbsp tomato paste
  • 1 tbsp broth, granulated
  • 2 tsp turmeric
  • 1 pinch of cinnamon
  • 1 pinch of cardamom
  • 1 pinch(s) clove(s), ground
  • 1 pinch(s) of Allspice, ground
  • ½ tsp coriander
  • ½ tsp cumin
  • 1 bay leaf
  • n. B. water

Instructions

Working time approx. 40 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour 10 minutes

Brown the meat, cut into small cubes, in batches in half of the oil in a non-stick pan. Loosen the juices with a little water and add to the meat. Peel the onions and garlic, then roughly chop the onions. Peel the potatoes, fry them well in the remaining oil in the pan, then remove from the pan. Sauté the garlic and onions in the pan fat, then add the meat and potatoes. Peel and chop the ginger, then wash and dice the tomatoes. Add both to the meat along with the tomato paste and the remaining spices. Then add enough water to cover the ingredients. Season to taste. The meat should be covered and simmered over low heat for about 30 minutes, until the potatoes are also tender. Rice is the best side dish.
