Indonesian rice dish (spicy)

Ingredients for 4 servings:

  • 400 g rice (long grain rice)
  • 400 g pork schnitzel
  • 1 tbsp tomato ketchup
  • 4 tbsp oil
  • 2 onions
  • 5 tbsp soy sauce, sweet
  • 2 tsp curry
  • ½ tsp spice mix (Chinese seasoning)
  • 1 tsp sambal oelek
  • 4 eggs
  • 1 tsp lemon(s)
  • Salt

Instructions

Working time approx. 40 minutes; Total time approx. 40 minutes

Cut the pork schnitzel into small cubes, season with salt, ketchup, lemon, and 2 tablespoons of soy sauce, and let stand for about 30 minutes. In the meantime, cook the rice in plenty of salted water, drain, and keep warm in the oven at 50°C. Heat 3 tablespoons of oil in a pan and brown the meat all over. Finely chop the onions and sauté them in a second pan with the remaining oil, seasoning with the remaining soy sauce. Add this mixture and the rice to the meat and heat briefly. Season to taste with curry, Chinese spice, and sambal oelek. Return to the oven to keep warm. Fry the eggs individually as fried eggs and serve on top of the Indonesian rice dish. Green cucumbers, tomatoes, kroepoek, mango chutney, and mustard fruits go well as side dishes. Set aside extra soy sauce and sambal for seasoning.
