Insalata Mista with Pesto Dressing

  • 1 Lettuce
  • 1 Red pepper
  • 1 Cucumber
  • 1 bunch Spring onions
  • 2 Carrots
  • 1 Can Corn
  • 1 Clove of garlic
  • 3 tablespoon Red pesto
  • 2 tablespoon White wine vinegar
  • 1 tablespoon Tomato paste
  • 250 Milliliters Vegetable broth
  • 250 g Cocktail tomatoes
  • Salt
  • Pepper
  1. Wash the lettuce and cut into pieces. Wash, core and dice the peppers. Wash the cucumber and cut into slices. Halve the tomatoes after washing and cut the spring onions into rings. Peel and grate the carrots. Mix the drained corn with the previous ingredients.
