Irish mashed potatoes with red seaweed

Ingredients for 3 servings:

  • ½ kg potatoes
  • 25 g seaweed (red algae), dried, soaked for 5 minutes
  • 250 ml milk
  • 100 g butter
  • some salt
  • some black pepper, freshly ground

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Dulse champ

Boil, peel, and mash the potatoes. Shortly before the potatoes are finished cooking, soak the red seaweed, pat dry with kitchen paper, and simmer in the milk over low heat for 3 minutes. Add it to the potatoes along with the butter. Season with salt and pepper and serve hot.
