Ingredients for 2 servings:

  • 4 large eggs, fresh
  • 1 large boiled potato(s)
  • 1 tbsp chives
  • some lemon juice
  • some black pepper, freshly ground
  • some salt
  • 20 g butter for frying

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

Irish omelette

Peel and mash the potatoes. Separate the eggs, whisk the egg yolks with the potatoes, chives, lemon juice, salt, and pepper. Whisk the egg whites and gently fold them in. Heat the butter in a large, ovenproof skillet and fry the egg mixture over medium heat for about 4 minutes until golden brown. Briefly place under a grill until golden brown. Serve hot.
