Ingredients for 4 servings:
- 4 large eggs, fresh, hard-boiled
- 250 ml milk
- 2 tbsp butter, for frying
- 1 small onion(s), peeled and cut into small cubes
- 2 tbsp flour
- 4 slices of toasted bread, thickly sliced and toasted
- some cheddar cheese, grated
- some salt
- some black pepper, ground

Working time approx. 15 minutes; Total time approx. 15 minutes
Irish convent eggs
Heat the butter in a pan and sauté the onion over medium heat. Stir in the flour, add the milk, and cook, stirring constantly, until a sauce forms. Season with salt and pepper. Add the eggs, each sliced into 6, and heat briefly. Spread evenly on the toast and serve sprinkled with cheese.
