Ingredients for 3 servings:

  • ½ baguette(s)
  • 100 g salami, Italian, spicy
  • 100 g arugula
  • 120 g cherry tomatoes
  • 20 ml balsamic vinegar, lighter
  • some olive oil
  • Salt (can also be sea salt)
  • 1 sprig(s) rosemary
  • 50 g Parmesan, grated
  • pepper

Instructions

Working time approx. 40 minutes; Total time approx. 40 minutes

Heat a little olive oil and a sprig of rosemary in a pan. Roughly slice the salami and fry in the hot pan until crispy. Then transfer to crepe paper to cool. Pour a little more olive oil into the still-hot pan. Cut the baguette into cubes and fry in the pan until golden brown. Meanwhile, wash the arugula, remove the stems, and roughly tear the pieces. Halve the cherry tomatoes. Place the arugula and cherry tomatoes in a bowl and season with balsamic vinegar, oil, salt, and pepper. Add the crispy baguette cubes and the salami slices/chips to the salad and toss everything together. Finally, mix in a little grated Parmesan cheese. Sprinkle the remaining Parmesan cheese over the bread salad and serve immediately.
