Italian bread soup

Ingredients for 4 servings:

  • 500 g ciabatta or baguette from the previous day
  • 1 liter broth (chicken or vegetable)
  • 1 onion(s), finely diced
  • 1 carrot(s), cut into fine cubes
  • 1 celery, cut into fine cubes
  • 1 chili pepper(s), finely diced
  • 100 ml olive oil
  • 1 kg tomatoes, very aromatic
  • 2 garlic cloves
  • 1 handful of basil
  • Sugar
  • Salt

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Cut the white bread into large pieces and soak them in the broth. Sauté the vegetables in olive oil. Peel the tomatoes and strain them (using a sieve or a food mill). If the tomatoes aren’t very aromatic, use canned tomatoes instead. Add the tomatoes, crushed garlic, and the slightly squeezed bread to the vegetables. Season with salt and sugar and simmer gently for 30 minutes. Serve with basil and a drizzle of olive oil. Delicious not only hot.
