Ingredients for 4 servings:
- 4 chicken breasts
- 6 tomatoes, peeled and quartered
- 10 shallots, peeled and halved
- 2 cloves garlic, peeled, finely sliced
- 30 olives, black or green, halved
- 3 cloves rosemary
- 2 sprigs thyme, fresh or dried
- 8 tbsp olive oil
- 2 small red chili peppers
- 250 ml chicken broth or vegetable broth
- salt and pepper
- Spice mix (poultry seasoning)
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 45 minutes
Preheat the oven to 160-180°C (top/bottom heat). Rub the meat with salt, pepper, and poultry seasoning. Heat 4 tablespoons of olive oil in a pan and sear the meat until browned. Brush an ovenproof dish with the remaining olive oil, pour in the meat, and add the vegetables and seasoning. Top with the broth and cook in the preheated oven for about 20-25 minutes. Serve with baguette or rice. This dish is perfect for preparing the day before.
