Sicilian chicken thighs

Ingredients for 4 servings:

  • 1 onion(s)
  • 3 tbsp olive oil
  • 8 small chicken thighs
  • 400 g tomatoes
  • ½ bunch flat-leaf parsley
  • Basil, a few leaves
  • some salt
  • some pepper, from the mill
  • 100 g green olives, pitted

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour

Peel and dice the onion, and fry it in a pan with olive oil. Add the chicken thighs and fry for about 6 minutes on each side. Peel and dice the tomatoes, and add them to the pan. Season with salt and pepper. Chop the parsley (reserve some for garnish) and basil and add them. Simmer with the lid closed for about 20 minutes. Add the olives and simmer for another 15 minutes. Serve on plates and sprinkle with the remaining parsley.
