Italian fan eggplants

Ingredients for 4 servings:

  • 2 eggplants, long
  • 75 g cooked ham
  • 75 g smoked cheese
  • 1 tomato(s)
  • salt and pepper
  • some olive oil

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 50 minutes; Total time approx. 1 hour 5 minutes

Wash and trim the eggplants. Cut them into approximately 1 cm wide slices, leaving them connected at the bottom. Season the slices with salt and pepper. Slice the tomato, and cut the cheese and ham into small pieces. Alternate the slices as follows: 1 slice of tomato and some cheese, some ham and cheese, etc. Place the eggplants in a greased dish and drizzle with olive oil. Bake in an oven preheated to 200°C for about 50 minutes.
