Ingredients for 4 servings:

  • 4 m.-large zucchini
  • 1 ball of mozzarella
  • 6 cherry tomatoes
  • salt and pepper
  • some oregano
  • olive oil
  • some basil

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 17 minutes; Total time approx. 42 minutes

Wash and trim the zucchini. Cut into approximately 1 cm wide wedges, ensuring they are still connected at the bottom. Season the wedges with salt, pepper, and oregano. Place in a dish and bake at 180°C for about 12 minutes. Meanwhile, slice the tomatoes and mozzarella. Remove the dish from the oven and fill the wedges alternately with tomatoes and mozzarella, drizzle with olive oil. Return to the oven for another 5 minutes. Remove from the oven and garnish with basil.
