Italian Parmesan Meatloaf

Ingredients for 4 servings:

  • 500 g minced beef or mixed
  • 1 m.-large onion(s), if available red
  • 3 garlic cloves
  • 1 handful of herbs (oregano, thyme)
  • 1 egg(s)
  • 1 tbsp tomato paste
  • 1 tbsp breadcrumbs
  • 1 pinch of salt and pepper, freshly ground
  • some paprika powder
  • 1 tsp vegetable broth, instant
  • tsp curry
  • 50 g Parmesan, freshly grated (absorbs a lot of water)
  • ½ cup water
  • 2 tbsp olives, pitted, finely chopped
  • 2 tomatoes, sliced

Working time approx. 10 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 55 minutes

First, grate the Parmesan cheese and set aside. Peel and finely chop the onion and garlic. Chop the herbs. Now add the herbs, spices, Parmesan cheese, and breadcrumbs to the minced meat, along with the water, and knead for 2 minutes. Finally, knead in the chopped olives. Pour the dough into a baking dish, top with the tomato slices (to keep the roast moist), and bake in the oven on the middle rack at approximately 200°C for approximately 45 minutes. Prepare a sauce separately. We opted for an onion sauce. It goes well with pasta, boiled potatoes, rice, or dumplings.
