Italian salami pasta

Ingredients for 4 servings:

  • 500 g pasta
  • 3 tbsp olive oil
  • 1 onion(s)
  • 3 bell peppers, colored
  • 800 g tomatoes, pureed, from the can
  • 250g salami
  • 1 tbsp tomato paste
  • 1 tsp paprika powder
  • 2 tbsp parsley, fresh
  • salt and pepper
  • Herbs, Italian

Working time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes

Heat 2 tablespoons of olive oil in a large pan. Sauté the finely chopped onion over low heat, stirring constantly, until softened. Add the bell peppers, tomatoes with their juices, tomato paste, and paprika, and bring to a boil. Add the salami and parsley. Season to taste with salt, pepper, and Italian herb mix. Stir the sauce and bring to a boil, then reduce the heat and simmer for 10-15 minutes. Meanwhile, cook the pasta in a pot of lightly salted water according to the package instructions until al dente, then drain. First stir in the remaining olive oil, then the salami sauce, and stir into the pasta. If the pan is large enough, simply toss it here. Garnish with parsley and serve.
