Ingredients for 1 servings:

  • 1 scallop(s)
  • 1 tsp oil
  • 1 tsp butter
  • some salt
  • ½ pear(s)
  • some water with lemon juice
  • 1 tbsp butter
  • 1 tbsp juice (pear syrup)
  • some salt (Maldon salt)
  • 1 herb leaf (red shiso)

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Fry the scallop in the oil and butter mixture, season with salt. Cut two slices from the pear and store them in acidified water until ready to use. Place the butter in a pan, let the pear slices cook for a while, add the pear syrup, and let the pear slices caramelize slightly. To serve: Place a pear slice on top, add the scallop, and cover with another pear slice. Sprinkle with Maldon salt and garnish with a leaf of red shiso.
