Ingredients for 1 servings:

  • 110 g water
  • ⅛ tsp salt
  • ⅛ tsp baking powder
  • 250 g wheat flour type 405

Instructions

Working time approx. 15 minutes; Rest time approx. 2 hours; Cooking/baking time approx. 1 minute; Total time approx. 2 hours 16 minutes

Place the baking powder on a baking tray and bake in the oven at 130°C (top/bottom heat) for about 60 minutes. Mix the water with the salt and the baking powder. Once well blended, add the flour and mix. Everything together forms a dry dough. Let the dough rest for 30 minutes. Then knead it once. Let it rest for another 30 minutes, then knead it a second time. Let the dough rest for 60 minutes and then knead it one last time. Roll out the dough flat, about 2 mm thick. Dust it well with flour so it is dry. Then fold the dough over itself and cut into strips about 2 mm thick with a knife. Bring water with salt to a boil and cook the pasta for 1 minute. Then it is ready to serve. This quantity is enough for 2 servings.
