Ingredients for 4 servings:
- 1 large onion(s)
- 5 potatoes
- 1 bell pepper(s)
- 1 zucchini
- 5 garlic cloves
- chili powder
- curry powder
- Paprika powder
- Sea salt or organic herb salt
- pepper
- 1 can coconut milk
- 200 ml water
- Olive oil or walnut oil

Working time approx. 10 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 35 minutes

First, finely chop or dice the onion. Heat the oil in a pan and fry the onions until translucent. Then add the chili powder, curry powder, salt, pepper, and paprika. Add a little more oil if necessary and fry for 2 minutes. In the meantime, peel the potatoes and dice them. Finely chop the zucchini and bell peppers. Finely slice or finely chop the garlic cloves. Add 200 ml of water and the garlic cloves to the onions and spices and simmer for a while. Add the bell peppers and zucchini to the pan and simmer briefly again. Then add the potato pieces and coconut milk. Mix everything well and simmer on medium heat for 10 to 15 minutes, then season to taste. Serve with rice or other tasty side dishes.
