Ingredients for 8 servings:

  • 200 g Jerusalem artichoke
  • 3 slices of bacon
  • 400 ml milk
  • 100 ml cream
  • Pepper, black from the mill
  • Sea salt
  • 1 pinch of nutmeg
  • 8 slices of bacon

Briefly fry the three bacon slices in a non-stick pan. They should still be soft and the fat should render slightly. Peel the Jerusalem artichokes and dice them very finely. Cook them in the milk and cream with the fried bacon slices until soft. Puree very finely with a hand blender. Season the milkshake with black pepper, sea salt, and nutmeg. Fry the bacon slices in a non-stick pan until very crispy. Pour the shake into glasses and garnish with the bacon sail. The shake can be served cold or warm. For the warm version, it is better to froth it again with a hand blender and add a little soy lecithin if necessary. Alternatively, you can add a topping of milk foam. The dish can be prepared a day in advance. The bacon should be freshly cooked.
