Lamb's lettuce with smoked duck breast

Ingredients for 4 servings:

  • 100 g lamb’s lettuce (lamb’s lettuce)
  • 400 g mushrooms, small
  • 1 tbsp parsley, finely chopped
  • ½ dl sunflower oil
  • ½ dl olive oil
  • 2 tbsp coarse-grained mustard
  • 2 tbsp shallot(s), finely chopped
  • 5 tbsp herb vinegar
  • Salt
  • Black pepper, freshly ground
  • 2 eggs, boiled and finely chopped
  • 1 smoked duck breast
  • some olive oil, for frying

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

Clean the mushrooms and sauté them in a little olive oil, season, and sprinkle with parsley. Combine the sunflower and olive oil with the mustard, shallots, and vinegar, and season the dressing with salt and pepper. Briefly toss the lamb’s lettuce with the dressing, arrange on a plate, and garnish with the mushrooms, chopped eggs, and sliced ​​duck breast. Tip: You can, of course, also slice the mushrooms depending on their size and your taste.
