Juicy apple fritters

Ingredients for 24 servings:

  • 500 g flour
  • 1 cube of yeast
  • 250 ml milk
  • 100 g sugar
  • 75 g raisins
  • 2 tbsp rum
  • 2 m.-sized eggs
  • 75 g butter or margarine
  • 1 pinch of salt
  • 300 g apples
  • 2 tbsp lemon juice
  • 1 lemon(s), untreated, grated peel
  • 1 ½ kg fat (vegetable fat), white
  • Cinnamon with sugar, for rolling

Instructions

Working time approx. 20 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 20 minutes

Put the flour in a bowl and make a well in the bowl. Crumble the yeast into the well. Heat 100 ml of milk and add it to the yeast along with about 1 tablespoon of sugar. Mix everything together to form a thick paste. Cover and let rise in a warm place for about 15 minutes. Mix the raisins and rum. Heat the remaining milk and add it to the pre-dough along with the remaining sugar, eggs, fat in flakes, salt, and lemon zest. Knead everything well, cover and let rise for about 30 minutes. Peel the apples, cut them into small cubes, mix with the lemon juice, and mix into the batter along with the rum-infused raisins. Let rise for another 20 minutes. Heat the frying oil to 180°C. Using two floured tablespoons, scoop out small doughnuts from the dough. Fry in batches in the hot oil for about 6 minutes until golden brown. Roll them in the sugar and cinnamon mixture. Taste best fresh.
