Quark balls

Briefly whisk the eggs, salt, sugar, and vanilla sugar. Then stir in the quark. Stir in the flour, starch, baking powder, and psyllium husks. Using a tablespoon briefly dipped in the hot oil, scoop out balls of the tough dough and fry for about 2 minutes on each side. Then remove with a slotted spoon, drain on kitchen paper, and roll in sugar. They’ll still taste great the next day.
