Ingredients
 

  • 6 Eggs separated
  • 200 g Powdered sugar
  • 1 Vanilla sugar
  • 400 g Apples (Boskoop)
  • 1 Lemon untreated - juice and zest
  • 150 g Ground hazelnuts
  • 150 g Ground poppy seeds
  • Fat for the bottom of the mold
  • Icing sugar for sprinkling

Instructions
 

  • Brush a 26 cm diameter springform pan with butter "only on the bottom". Preheat oven to 175 degrees.
  • Mix the egg yolks with 150 g of the sugar and vanilla sugar until very frothy. Peel, core and roughly grate the apples, then mix immediately with the lemon juice. Mix the nuts, poppy seeds, apples and the grated lemon zest into the egg yolk mixture.
  • Beat the egg white with the remaining sugar and a pinch of salt to form firm snow and carefully "lift" it into the dough (do not stir!).
