Ingredients for 4 servings:
- ¾ kg roast pork (rolled roast)
- 2 tbsp sherry, dry or white wine
- 200 g mushrooms, small
- 150 g crème fraîche
- salt and pepper
- Paprika powder
- n. B. Sauce thickener

Rub the meat with salt, pepper, and paprika. Place it on a sufficiently large piece of roasting foil, pour the sherry (or white wine) over the meat, seal the foil, and cook at 200°C for about 75 minutes. Remove the meat from the foil and keep warm wrapped in aluminum foil. To make the sauce, bring the resulting meat juices from the foil to a boil with the mushrooms, stir in the crème fraîche, and thicken with a thickener, if desired. Season to taste with salt, pepper, paprika, and sherry. Serve with parsley potatoes.
