Red lentils with onions

Ingredients for 4 servings:

  • 100 g lentils, red
  • 300 ml vegetable stock
  • 4 m.-sized onion(s)
  • 2 tbsp olive oil
  • 2 tbsp crème fraîche
  • 1 tbsp soy sauce
  • salt and pepper
  • few herbs (e.g. rosemary, thyme)

Working time approx. 15 minutes; Total time approx. 15 minutes

vegetarian, ideal as a side dish

Cook the lentils in the vegetable broth for 5-10 minutes with the lid closed until relatively soft (but not mushy; add more water if necessary). Meanwhile, slice the onions. Add them when the lentils are soft. Boil off the remaining water, add olive oil, and let it simmer for another minute. Season with pepper and salt to taste and any herbs you like (I used about 2 pinches each of dried rosemary and thyme). Stir in the crème fraîche. Then add the soy sauce and mix well again. I ate it with wild garlic patties, but it would certainly also go well with meat! Serves 1-2 as a main course. 4 servings are based on a side dish. If using a different type of lentil, be sure to check the cooking time!
