Kaiserschmarrn with vanilla soy milk

Ingredients for 4 servings:

  • 200 g flour
  • 4 tbsp sugar
  • 4 eggs
  • 375 ml soy milk (soy drink), vanilla flavor
  • 1 shot of carbonated mineral water
  • 1 pinch of salt
  • 1 pinch of cinnamon
  • Butter, for the pan
  • Powdered sugar, for dusting
  • e.g. raisins

Instructions

Working time approx. 10 minutes; Rest time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes

Put the flour, 2 teaspoons of sugar, and a pinch of cinnamon in a bowl. Separate the eggs and add the egg yolks to the flour. Mix the mineral water and milk together with the ingredients in the bowl to form a dough. If you like raisins, you can add them now. Beat the egg whites with the pinch of salt and the remaining 2 teaspoons of sugar until stiff peaks form and fold into the batter. Let stand for about 10 minutes to allow the ingredients to fully combine. Then melt the butter in a pan and, using a ladle, pour the batter into the pan in a thickness of about a finger. When the batter starts to brown on the underside, turn it over and tear it apart with a fork. Dust with powdered sugar and let it caramelize lightly. Homemade apple or plum compote goes well with this.
