Ingredients for 6 servings:
- 750 g kale
- 350 g potatoes
- 1 onion(s)
- 3 carrots
- 1 clove(s) garlic
- 50 g butter
- 1 tbsp crème fraîche
- 1 liter vegetable broth, strong
- salt and pepper
- nutmeg
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
Strip the kale from the ribs, wash, and blanch in salted water. Peel and roughly dice the potatoes and carrots. Dice the onion and sauté in butter with the chopped garlic. Add the kale, carrots, and potatoes, sauté briefly, then add the broth and simmer until soft. Purée thoroughly with a hand blender, stir in the crème fraîche, and season with salt, pepper, and nutmeg. You can serve any kind of sausage with this dish. Another nice variation is to place very thinly sliced fresh salmon fillet in the plates and then pour the hot soup over it.
