Ingredients for 4 servings:
- 500 g kale, fresh
- 2 slices of bacon
- 1 onion(s)
- 1 liter of broth
- 4 large potatoes
- 4 Cabanossi
- 1 tsp, leveled caraway powder
- Salt and pepper from the mill
- 1 tbsp lard
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 15 minutes
Wash the kale and blanch it in portions in boiling salted water for about 5 minutes, then remove, drain, and finely chop (I used a pre-made bag of fresh kale). Peel the potatoes, halve them, and dice them. Peel and dice the onion, and dice the bacon. Melt the lard in a saucepan, add the onion and bacon, and fry briefly. Add the stock and the kale. Simmer over medium heat for 40 minutes, then add the potatoes and sliced Cabanossi and simmer for another 20 minutes. Add a little more stock if necessary, and season to taste with caraway, salt, and pepper. The stew tastes even better reheated the next day.
