Ingredients for 2 servings:
- 400 g kale
- 100 g bacon cubes
- 1 m.-sized onion(s)
- 375 g potatoes
- 1 tbsp sugar
- 1 tbsp clarified butter
- 2 slices of smoked pork
- 150 ml vegetable stock
- e.g. salt and pepper
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 1 hour 5 minutes; Total time approx. 1 hour 20 minutes
Pull the kale from the stalks and wash thoroughly. Bring a large pot of salted water to a boil and blanch the kale in batches for about 3 minutes. Drain. Peel and finely dice the onion. Peel and quarter the potatoes. Heat the clarified butter in a saucepan and sauté the bacon and onion cubes for 2-3 minutes. Add the potatoes and stock and simmer until the potatoes are tender. Lightly mash the potatoes with a potato masher and stir in the kale. If the kale seems too dry, add a little more water. Season to taste with salt, pepper, and a pinch of sugar. Add the smoked pork to the kale. Simmer for about 45 minutes. Serve the finished stew with the smoked pork.
