Kale with Pinkel Ammerland style

Ingredients for 4 servings:

  • 200 g smoked bacon
  • 1 onion(s)
  • 400 g smoked pork
  • 125 g clarified butter
  • 1 gr. can/n kale
  • 125 g oat groats or oat flakes
  • 4 cooked sausages
  • 8 potatoes
  • 4 Pinkelwurst (Ammerland or Oldenburg style)
  • 1 tbsp mustard, medium hot
  • salt and pepper
  • 1 tsp sugar or honey, optional

Working time approx. 15 minutes; Rest time approx. 12 hours; Cooking/baking time approx. 2 hours 30 minutes; Total time approx. 14 hours 45 minutes

Dice the bacon, onion, and smoked pork. Brown the bacon in a large saucepan, then add the clarified butter and diced onion and brown. Add the large can of kale and the diced smoked pork to the pan. Half fill the empty can with water and mix the water with the kale. Simmer the kale gently over low heat for about 45 minutes, stirring occasionally. Then add the oat groats; this ensures the kale has a good texture. Then simmer the kale gently for about 45 minutes over low heat, stirring occasionally. Add a little more water if necessary. The kale must now marinate overnight in the refrigerator. The next day, reheat the kale, add the cooked sausages, and simmer gently over low heat for about 30 minutes. Peel the potatoes and also boil them in a little salted water for about 20-30 minutes. Then add the Ammerländer Pinkel to the kale. Simmer everything for another 10 minutes over low heat. Finally, season the kale with mustard, salt, and pepper. Add 1 teaspoon of sugar or, alternatively, 1 teaspoon of honey to taste. Tip: Before serving the kale, we recommend taking a long walk in cold temperatures (preferably below zero). The ideal time to eat kale is in the winter months between December and March. Where can you get the original Ammerländer Pinkel? It is important that you use Ammerländer Pinkel (alternatively, Oldenburger Pinkel will also work), and under no circumstances Bremer Pinkel. Ammerländer Pinkel can be purchased online, for example. What is oat groats and where can you get them? Oat groats are hulled and cut oats (similar to rolled oats). You can find them either in health food stores or online.
