Kassel farmer's stew

Ingredients for 6 servings:

  • 1 bunch of soup vegetables
  • 1 white cabbage (approx. 1 kg)
  • 2 onions
  • 1 kg potatoes
  • 2 bay leaves
  • 2 tbsp vegetable broth (instant)
  • pepper
  • Salt
  • 6 Kasseler neck steaks (approx. 180 g each)
  • ½ bunch parsley

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 1 hour 40 minutes; Total time approx. 2 hours

Cut the soup vegetables into small cubes. Slice the white cabbage into strips. Finely dice the onions. Peel the potatoes and chop them into large pieces. Combine the prepared ingredients and the bay leaf in a large, lidded roasting pan. Bring approximately 1 3/4 liters of water to a boil. Dissolve the broth in it and season generously with pepper and salt, if desired. Pour over the vegetables. Place the smoked pork slices on top. Cover and braise in a preheated oven (electric oven 175°C/fan oven 150°C, gas mark 2) for approximately 1 1/2 hours. Finely chop the parsley. Remove the lid from the roasting pan and grill the farmer’s stew for 5-7 minutes. Remove and sprinkle with parsley.
