Kasseler baked in white wine

Ingredients for 12 servings:

  • 2 kg boneless smoked pork
  • 6 glasses of white wine
  • 3 bell peppers, red, yellow and green
  • 3 onions
  • 3 stalk(s) leeks
  • 600 g mushrooms, fresh
  • 3 tbsp butter
  • 6 tbsp flour
  • 2 cups tomato paste
  • 300 g cheese, grated
  • salt and pepper
  • marjoram
  • basil

Instructions

Working time approx. 30 minutes; Rest time approx. 12 hours; Total time approx. 12 hours 30 minutes

Braise the meat in white wine for about 20 minutes and let it cool in the wine (preferably overnight in the refrigerator). Finely slice the vegetables, fry in butter, and dust with flour. Add the tomato paste and wine stock and simmer for 10 minutes, seasoning to taste. Carve the meat and place it in an ovenproof dish. Arrange the vegetables on top, sprinkle with cheese, and bake in the oven at 250°C for one hour. Serve with a seasonal salad and French white bread.
