Kastinys with potatoes

Ingredients for 4 servings:

  • 800 g sour cream
  • 80 g butter
  • Garlic
  • salt and pepper
  • onion greens
  • Parsley
  • 500 g potatoes
  • olive oil
  • cucumber(s)
  • radish

Instructions

Working time approx. 50 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour 30 minutes

Lithuanian national dish

Place the butter in a bowl and melt it over a pot of boiling water. Add half a spoonful of sour cream. If lumps begin to form, stir the mixture clockwise with a wooden spoon. Repeat this process until all the sour cream is used up. The mixture should be glossy, smooth, and thick. Season with salt, pepper, and garlic, then stir in the chopped onion greens and parsley. Place the kastinys in the refrigerator while you prepare the potatoes. Preheat the oven to 210°C (420°F). Wash, peel, and halve the potatoes. Season the halves with salt and pepper, brush with olive oil, and bake in the oven for 30 minutes. Serve kastinys with potatoes, cucumbers, and radishes. Kastinys is a traditional old Lithuanian dish made with sour cream and butter. This dish is eaten with eggs, bread, cakes, and porridge, but it makes a great spread that goes with anything. However, kastinys is usually eaten with potatoes.
