Kati's quick roast turkey

Ingredients for 3 servings:

  • 1 kg turkey breast in one piece
  • 1 leek or 1 bunch of spring onions, sliced
  • some starch flour
  • salt and pepper
  • Paprika powder
  • Oil for frying
  • 1 m.-sized onion(s)
  • 2 tbsp tomato paste
  • 2 tbsp mustard, medium hot
  • 200 ml cream
  • 1 bay leaf
  • 2 allspice berries, if desired
  • e.g. butter

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 30 minutes

Rub the turkey breast on all sides with salt, pepper, and paprika, then with cornstarch, massaging gently. Melt the oil in a pan, add the meat, and fry until browned. When the underside is nicely browned, turn the meat over. Place a few knobs of butter on the meat, add the diced onion, tomato paste, and mustard, and fry over medium heat. When the other side is also browned, deglaze with a glass of water; it should sizzle nicely. The cornstarch quickly creates a creamy sauce. Cook for about 2-3 minutes, then refresh with another glass of water. When most of the liquid has evaporated, cook for another 3-5 minutes. Add the bay leaves, allspice, and cream. Braise the roast for about 30 minutes over medium heat, adding a little more water if needed. After 30 minutes, add the leek. Braise the roast for another half hour, seasoning the sauce with salt. Serve with potatoes.
