Ingredients for 4 servings:
- 120 g nuts or almonds, finely chopped
- 120 g sunflower seeds
- 200 g golden linseed, crushed
- 50 g pumpkin seeds
- 50 g psyllium husks
- 70 g coconut flour or almond flour
- 1 ½ tsp salt
- 1 pinch(s) of cardamom powder and/or caraway seeds as desired
- 5 eggs
- 300 ml water
- 2 tbsp vinegar
- 3 tbsp pumpkin seed oil, optional
Instructions
Working time approx. 20 minutes; Rest time approx. 4 hours; Cooking/baking time approx. 1 hour 30 minutes; Total time approx. 5 hours 50 minutes
Low-carb
Combine the dry ingredients and process in a food processor. Combine the eggs, water, vinegar, and oil, if desired. Knead everything together with a mixer for 15 minutes. The more thoroughly mixed, the better the bread tastes. Transfer everything to a prepared baking pan, cover with a cloth, and let it rest in the refrigerator for at least 4 hours (I always let it rest overnight). Bake in the oven at 175°C (350°F) for 90 minutes.
