KFC Cole Slaw

Ingredients for 6 servings:

  • 1 large white cabbage
  • 1 large carrot(s)
  • 1 cup(s) sugar, more or less to taste
  • 2 tsp salt
  • 4 tsp pepper
  • 4 cups milk
  • 1 tsp mustard
  • 2 cups mayonnaise
  • 4 cups buttermilk
  • 2 tsp vinegar
  • 4 tsp lemon juice

Instructions

Working time approx. 30 minutes; Rest period approx. 2 days; Total time approx. 2 days 30 minutes

American coleslaw like at Kentucky Fried Chicken

Remove the stalk from the white cabbage and then grate the cabbage as finely as possible (best done with a food processor and about the size of a grain of rice). Peel the carrot and grate it just as finely. Mix together the cabbage, carrots, sugar, salt, pepper, 2 teaspoons of lemon juice, and the milk. Mix the mayonnaise with buttermilk, 2 teaspoons of lemon juice, and vinegar and pour over the coleslaw. Mix everything thoroughly again. Note: It’s best to let the coleslaw sit overnight (Americans even let it sit for 2 days, as this is the best way to make the coleslaw taste better!). Season again with salt, pepper, and sugar before serving.
