Ingredients for 4 servings:
- 150 g king oyster mushrooms
- 100 g spring onions
- 2 tbsp rapeseed oil
- 400 ml stock (mushroom stock)
- 400 ml vegetable stock
- 100 ml cooking cream, or 200 ml if desired
- some cornstarch
- salt and pepper
- lemon juice

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Clean and finely chop the mushrooms and spring onions. Heat the oil, sauté the mushrooms, and add the spring onions. Deglaze with stock and broth and simmer for about 10 minutes. Now add the cooking cream and thicken with cornstarch, if desired. Season to taste with salt, pepper, and lemon juice.
