Kiwi-banana slices

Ingredients for 1 servings:

  • 250 g butter, room temperature
  • 170 g sugar
  • 6 eggs
  • 300 g flour
  • 50 g baking cocoa
  • 1 packet of baking powder
  • 6 tbsp milk
  • 3 bananas
  • 500 g low-fat curd cheese
  • 1 handful of chocolate shavings
  • possibly honey
  • possibly gelatin powder
  • 200 g dark chocolate coating
  • 50 ml whipped cream
  • 10 kiwis

Instructions

Working time approx. 30 minutes; Rest time approx. 2 hours; Cooking/baking time approx. 30 minutes; Total time approx. 3 hours

Cream the room-temperature butter with the sugar until fluffy. Beat in the eggs, one at a time. In another bowl, mix the flour, baking powder, and cocoa powder well, then stir this mixture into the butter along with the milk. Line a baking sheet with parchment paper and spread the batter evenly on it. Bake at 175°C on the middle rack for about 30 minutes. Meanwhile, mash the bananas. The riper the bananas, the better. Alternatively, you can puree them. Mix the banana puree well with the quark, stir in the chocolate shavings, and season with honey to taste. If the mixture is still too runny, you can add a little gelatin. Refrigerate until ready to use. Peel the kiwis and cut into 3-5 mm thick slices. In the meantime, melt the chocolate coating and mix it with the cream. Let the finished cake base cool briefly and then cover with half of the chocolate coating. Let it cool for a few minutes. Now spread the banana curd evenly over the cake and spread the remaining chocolate coating over the curd. Finally, arrange the kiwis on top in a mosaic pattern and refrigerate the cake until ready to serve. Other fruit, such as strawberries, also works well instead of kiwi.
