Kiwi Chocolate Muffins

Ingredients for 12 servings:

  • 190 g flour
  • 2 tsp baking powder
  • ½ tsp baking soda
  • 60 g almond(s), grated
  • 80 g chocolate sprinkles
  • 1 egg(s)
  • 120 g sugar
  • 80 ml oil
  • 240 g buttermilk
  • 1 tsp lemon zest, grated
  • 50 ml pineapple juice
  • 3 kiwis

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Peel the kiwi and cut into pieces of any size. Preheat oven to 180°C and line a muffin tin with paper baking cups. In a bowl, combine the dry ingredients: flour, baking powder, baking soda, almonds, and chocolate sprinkles. In another bowl, break the egg and whisk. Then add the granulated sugar, oil, buttermilk, lemon zest, and pineapple juice, and finally fold in the kiwi pieces. Carefully stir in the dry ingredients. Fill the muffin tins about 3/4 full and bake at 180°C for 20-25 minutes.
