Basic recipe with variations

Place the chickpeas in a sieve and rinse thoroughly under running water. Then remove any white skins that have fallen off the chickpeas during the process. Lightly dry the chickpeas with a paper towel and add them to a blender with the remaining ingredients. Blend until a smooth mixture forms. Stir occasionally with a spoon to ensure all the chickpeas are blended. Enjoy the finished cookie dough immediately or add the remaining ingredients to taste. The cookie dough will keep in the refrigerator for one to two days.
