Künefe (Eko Fresh)

The perfect künefe (eko fresh) recipe with a picture and simple step-by-step instructions.

  • 3 Pc. Oven-Proof trays / aluminum baking molds
  • 1 Cup Sugar
  • 1 Cup Water
  • 250 g Butter
  • 250 g Mozzarella
  • 200 g Kadayif threads of dough
  • 80 g Clarified butter
  • 1,6 tsp Grape syrup
  • 50 g Pistachios, chopped
  • 0,5 tbsp Lemon juice
  • 250 g Pineapple fresh
  1. Boil the water and sugar to a thick syrup and allow to cool. Melt 250 g butter in a pan.
  2. Grease the baking molds generously with clarified butter and spread a first layer of threads of dough in it. With a second bowl, carefully press the dough threads into place and spread the mozzarella in slices over it. Then put another layer of dough threads on the mozzarella, which in turn are pressed down well with a bowl.
  3. Put the bowl in the oven at 220 degrees.
  4. Then put ½ a ladle of cold sugar syrup on the künefe, leave a small residue and decorate with pistachios.
  5. Dice the pineapple, add the rest of the sugar syrup, heat briefly and place on the künefe.
